Cherry Oat Breakfast Bars

Cherry Oat Breakfast BarsI’m always trying to get my beloved to eat breakfast.  I have no idea why this is such a difficult thing for him.  Maybe it’s because he’s had too many beers the night before (note to self:  beer muffins?)…so anyway, this is the latest in my series of ongoing attempts.  They’re kind of like a homemade Nutri-Grain bar mixed with a fruit crisp of sorts.  Mix them, bake them, eat them, repeat.  Pretty easy, really.

1 1/2 c Flour
2 1/2 c Oats
2 tsp Baking Powder
1/4 tsp Salt
1/4 tsp Cinnamon
1/2 tsp Vanilla Extract
1/3 c Brown Sugar
1/2 c Applesauce
1/4 c Butter, melted
10 oz Cherry Preserves (or whatever flavor you like)

Preheat oven to 350. Combine the dry ingredients in a medium bowl. In another bowl, combine the vanilla, brown sugar, butter, and applesauce.  Add the combined wet ingredients to the dry and stir just until well-mixed.  Pat 1/2 of this mixture into a greased 8×8 baking pan.  Top with preserves.  Press remaining mixture on top, then bake about 35 minutes, until golden.

Yield: 6-8 Bars
