Banana Oat Bread

Banana Oat BreadEveryone has about a million banana bread recipes.  And everyone has the best banana bread recipe…funny how that works.  I won’t say this one is the best…after all, what would that mean for all my other delightful banana bread recipes?!  I will say that this is a delightful variation on the basic though.  Still classic, just a little bit different…it’s like having Romano instead of Parmesan on your spaghetti…not like replacing spaghetti night with tacos or anything.

This bread is a perfect gift–most everyone likes banana bread.  Since it’s made with oats, it’s nice for this time of year.  It’s a little heartier…healthier, perhaps.

Ingredients:
1 1/2 c Flour
3/4 c Oats
1/3 c Brown Sugar
1/3 c Sugar
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1/2 Tbs Cinnamon
1 c Mashed Ripe Bananas
1/3 c Buttermilk
1/4 c Canola Oil
1 tsp Vanilla Extract
2 Eggs, beaten
1/2 c Walnuts, chopped

Directions:
Preheat oven to 350. Butter and flour the loaf pan(s) or spray with nonstick spray. In a large bowl, combine the flour, oats, sugars, baking powder, baking soda, salt, and cinnamon.

In another bowl, stir together the bananas, buttermilk, oil, vanilla extract, and eggs.  Add these combined ingredients to the flour mixture and stir together just until combined. Stir in the walnuts and transfer the glop to the prepared pan(s).

Bake in preheated oven for about 30 minutes (longer–maybe 50 minutes–if you use a large loaf pan).  Use a toothpick to check it–it’s ready when a toothpick inserted in the center comes out clean.

Yield: 3 Mini Loaves, 2 Medium Loaves, or…(what could it be?!)…1 Large Loaf
