Summery Peach Cupcakes with Fluffy Marshmallow IcingThese cupcakes are my f/u to winter. Hey, I like pumpkin, apples, and pears as much as the next girl, but I’m just not ready to let go of summer this year.  I’m trying (yeah well, sorta…), but I’m afraid it’s not working out so hot…not yet, at least.  Yeah, of course I realize there’s nothing I can do about the impending doom (winter), but that doesn’t mean I’m not going down kicking and screaming–every step of the way.

Enter: Summery Peach Cupcakes with Fluffy Marshmallow Icing.  These are everything you’d want in a summer treat–sweet, fruity, and light.  Hope you like ‘em.

Ingredients (Cupcakes):
2 c Flour
1/4 c Almond Meal
1 c Sugar
2 tsp Baking Powder
1 tsp Cinnamon
1/8 tsp Ginger
1/4 c Sweetened Coconut Flakes
2/3 c Canola Oil
1/4 c Milk
3/4 c Pureed Peaches
2 Eggs
1 tsp Vanilla Extract
1/2 tsp Almond Extract

Ingredients (Icing):
1 c Sugar
1/3 c Water
1/4 tsp Cream of Tartar
2 Egg Whites
1 tsp Vanilla Extract
1/2 tsp Almond Extract

Directions (Cupcakes):
Preheat oven to 350.  Line cupcake tins with summertime-patterned (yes, this is important) paper liners.  Whisk together the flour, almond meal, sugar, baking powder, cinnamon, ginger, and coconut in a large bowl.  In a medium bowl, stir together the canola oil, milk, peaches, eggs, and extracts.  Add these combined ingredients to the flour mixture and mix well.

Fill cupcake tins 2/3 full and bake for about 18-20 minutes or until a toothpick inserted in the center comes out clean.  Cool on a wire rack.

Yield: 18-24 Cupcakes

Directions (Icing):
In a medium saucepan, heat the sugar, water, and cream of tartar to  boiling over moderate heat.  As that heats and bubbles and becomes a smooth and fabulous sugar syrup, whip the egg whites and extracts in your nifty stand mixer until soft peaks form–this will take about five minutes…or more.  Don’t have a stand mixer?  Sucks to be you.

Slowly pour in the sugar mixture and continue to beat the egg whites until everything’s blend-y and happy and shiny.  Now frost those fabulous peachy cupcakes and prepare to humbly receive your praise.

Yield:  More than enough for these cupcakes.  You’ll probably only need half of it…so make something else or grab a spoon!
