Pumpkin Chocolate Chip Softies

Pumpkin Chocolate Chip SoftiesI heart pumpkin.  I’m so glad there’s not a shortage like last year. I nearly died.  No really, it’s true.  I had to search everywhere to keep the ol’ larder filled.  I love pumpkin smoothies, pumpkin oatmeal, pumpkin muffins, pumpkin soup…pretty much everything pumpkin that’s not the traditional pie.  Not a pie fan.   Yes, they can be quite cute and festive–but no, I don’t want to eat them.

So since I love pumpkin so much, I figured I should most certainly pump these puppies chock full o’ dairy.  You know, so I wouldn’t convince myself that I needed to taste test a cookie…off of every cookie sheet…from every batch.  You know, for quality control purposes of course.  Whew!  The top button on these here britches is certainly relieved I was able to escape that one, keeping him in a job.

1 c Butter, softened
1/2 c Sugar
3/4 c Brown Sugar
2 Eggs
1 tsp Vanilla Extract
1 c Pumpkin
2 c Flour
1 c Oats (heaping)
1 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 tsp Pumpkin Pie Spice
2 c Semi-Sweet Chocolate Chips (I used the jumbo chips…that’s just how I roll)

Preheat oven to 350.  Cream together the butter and sugars.  Add eggs, one at a time, then vanilla extract and pumpkin, stirring just until incorporated. In a medium bowl, whisk together the flour, oats, baking powder, baking soda, salt, and pumpkin pie spice.  Slowly add these combined dry ingredients to the butter mixture, mixing just until well-combined.  Stir in the chocolate chips.

Drop the dough by tablespoons onto ungreased cookie sheets.  Bake about 12-14 minutes; you want to remove them when they still look a tad underbaked (they’re supposed to be softies, remember?).  Let them rest for a couple of minutes on the sheets, then transfer them to wire racks to cool completely.  Serve them only to your bestest of friends.

Yield: About 50 softies

    I ate some of these cookies. I was sent home with a maxed out ziplock of these puppies in the afternoon and they were gone by 8 a.m. the next day, and that was with me practicing pretty good self control. Out of all the cookies I have ever eaten in my life, these definitely land in the top 3.
